Recipes/French Fries

Ingredients:
~ 1.2 kg russet potatoes (around 6 large potatoes - makes 2 batches with our deep frier)
deep fryer with oil
Instructions:
peel potatoes (can leave skin on the ends) and cut into evenly sized strips
soak potatoes in water for at least 30m
heat oil to 135C (275F) - cook potatoes in oil in batches for about 5 minutes each, dumping them out and letting them drain and cool
heat oil to 175C (350F) - fry potatoes in batches until golden brown, 5-6 minutes.
'refresh' older batches with about 1 minutes in the oil before serving, so all of the fries are hot.
blot with paper towel, and sprinkle with salt before serving.

Using pot, put fries in at 130c for 5 minutes, Then removed them and it them in again at 160c - it was about right
Filling the pot to just before the bolts for the handle was getting close to too much oil
Setting big burner to 3 was not quite high enough to hold it at 160c with no food in it
